Carusu is the Mangione family\u2019s \u201chome\u201d\u2014an intimate restaurant where Chef Alen<\/strong> in the kitchen, his brother Dominique<\/strong> as a sommelier, and their father Francesco<\/strong> welcoming guests transform every flavor into an expression of tradition and conviviality.<\/p>\n\n\n

The Mangione family\u2019s \u201chome\u201d overlooking the Valley of the Temples<\/h2>\n\n\n\n

With a passion for fine food and hospitality in their DNA, the opportunity for the Mangione family arose in 2022<\/strong>: Chef Alen returned to Agrigento following various experiences at Michelin-starred establishments<\/strong>, and a venue became available right in front of one of the most iconic views of the Valley of the Temples.<\/p>\n\n\n\n

Thus, Carusu was born\u2014an intimate space with just ten tables<\/strong> that blend seamlessly into the surrounding landscape. This harmony is achieved through the use of local materials<\/strong>\u2014such as terracotta, stoneware, wood, and ceramics\u2014alongside a panoramic window <\/strong>and a striking wall adorned with amphorae<\/strong>. Handcrafted by master Tunisian ceramicists, these vessels evoke the ancient Mediterranean trade routes along which cargoes of oil, wine, and spices once traveled between the coasts of North Africa and Sicily.<\/p>\n\n\n

Chef Alen Mangione\u2019s Cuisine<\/h2>\n\n\n\n

In the kitchen, Alen Mangione\u2014drawing on significant experience gained within the teams of culinary icons such as the Cerea brothers (at Da Vittorio), Ciccio Sultano, and Nino Ferreri\u2014presents a “cuisine of memories” <\/strong>deeply rooted in the Sicilian landscape and his own childhood recollections.<\/p>\n\n\n\n

The restaurant\u2019s very name\u2014Carusu<\/em>, a dialect term for a young boy or the youngest member of a kitchen brigade\u2014celebrates the enthusiasm of keeping a sense of childlike wonder alive in every dish.<\/p>\n\n\n

The collaboration with his uncle gave rise to Carusu Farm<\/strong>, a garden and farm where zero-mile vegetables <\/strong>are grown to order, following the rhythms of nature. This philosophy also inspired the “I Vegetali” tasting menu\u2014entirely dedicated to the plant-based produce of the Agrigento region\u2014which complements “A Mano Libera” (a six-course meat and fish menu featuring fresh market arrivals) and the “Caruso Experience” (nine courses showcasing the chef’s creative flair).<\/p>\n\n\n\n

Each dish evokes the history of Agrigento<\/strong>, such as the “Mascariata” Cuttlefish\u2014inspired by seaside barbecues with friends, it is char-grilled and stuffed with baby spinach, Sambuca, and a fried onion crumble reminiscent of beach sand\u2014and the “Giardino della Kolymbethra” dessert. A tribute to the Valley of the Temples, the latter features almond Bavarian cream, pistachio sponge cake, mulberry jam, mandarin gel, olive oil powder, and honey tuiles shaped to resemble the temples.<\/p>\n\n\n
