Located in the Valley of the Temples in Agrigento, overlooking the Archaeological Park’s Hellenistic Quarter, the Carusu restaurant is the realization of the Mangione family’s dream—a story of passion, heritage, and hospitality where Sicilian culinary tradition meets fine dining.

Carusu is the Mangione family’s “home”—an intimate restaurant where Chef Alen in the kitchen, his brother Dominique as a sommelier, and their father Francesco welcoming guests transform every flavor into an expression of tradition and conviviality.

Every ingredient comes from a known field, from friendly hands, from a landscape that is part of our history. Every dish is born of the conviction that cooking is not merely a matter of technique, but above all, of emotion.

The Mangione family’s “home” overlooking the Valley of the Temples

With a passion for fine food and hospitality in their DNA, the opportunity for the Mangione family arose in 2022: Chef Alen returned to Agrigento following various experiences at Michelin-starred establishments, and a venue became available right in front of one of the most iconic views of the Valley of the Temples.

Thus, Carusu was born—an intimate space with just ten tables that blend seamlessly into the surrounding landscape. This harmony is achieved through the use of local materials—such as terracotta, stoneware, wood, and ceramics—alongside a panoramic window and a striking wall adorned with amphorae. Handcrafted by master Tunisian ceramicists, these vessels evoke the ancient Mediterranean trade routes along which cargoes of oil, wine, and spices once traveled between the coasts of North Africa and Sicily.

Chef Alen Mangione’s Cuisine

In the kitchen, Alen Mangione—drawing on significant experience gained within the teams of culinary icons such as the Cerea brothers (at Da Vittorio), Ciccio Sultano, and Nino Ferreri—presents a “cuisine of memories” deeply rooted in the Sicilian landscape and his own childhood recollections.

The restaurant’s very name—Carusu, a dialect term for a young boy or the youngest member of a kitchen brigade—celebrates the enthusiasm of keeping a sense of childlike wonder alive in every dish.

The collaboration with his uncle gave rise to Carusu Farm, a garden and farm where zero-mile vegetables are grown to order, following the rhythms of nature. This philosophy also inspired the “I Vegetali” tasting menu—entirely dedicated to the plant-based produce of the Agrigento region—which complements “A Mano Libera” (a six-course meat and fish menu featuring fresh market arrivals) and the “Caruso Experience” (nine courses showcasing the chef’s creative flair).

Each dish evokes the history of Agrigento, such as the “Mascariata” Cuttlefish—inspired by seaside barbecues with friends, it is char-grilled and stuffed with baby spinach, Sambuca, and a fried onion crumble reminiscent of beach sand—and the “Giardino della Kolymbethra” dessert. A tribute to the Valley of the Temples, the latter features almond Bavarian cream, pistachio sponge cake, mulberry jam, mandarin gel, olive oil powder, and honey tuiles shaped to resemble the temples.

Wines of the Valley of the Temples

Front-of-house operations are overseen by his brother Dominique, a sommelier who curates a wine list driven by a deep narrative of the local terroir—featuring labels from the volcano, ancient vineyards, and bespoke selections, particularly those originating from the very hills surrounding the Valley of the Temples.

Among these, historic grape varieties such as Nero d’Avola and Grillo stand out; grown in calcareous, clay-rich soils, they retain the very minerality and savoriness that characterized the wines offered to the gods in ancient Greece.

Carusu is the ideal starting point for visiting the lower section of the Valley of the Temples park—a UNESCO World Heritage Site since 1997—taking in sights like the Kolymbethra Garden and the Temple of Zeus before making the ascent to the Temple of Concordia.

The Secret

During breaks from the kitchen or when seeking fresh inspiration for his menus, Chef Alen loves to retreat among the rows of vines at the family farm. It is while walking through the vegetable garden with his uncle and observing the growth of seasonal produce that his most innovative culinary creations are born—dishes capable of transforming the authentic essence of the land into fine dining.
